The implementation of health approval at the collection center and dairy processing units represents a considerable achievement for the dairy industry in Tunisia and to preserve the health of consumers. Respect of the advance, separation of flows, the systematic cleaning of milk containers (cans, tanks of trucks, tanks, cooling and storing milk) have significantly alter the "appearance" of the collection centers and milk processing units. efforts of veterinarians (who remain the primary guarantor of human health) and various officers of the department of agriculture is commendable, however, other crucial measures would have accompanied the establishment of accreditation health including: i) the antibiotic anarchic dairy cattle and ii) the outright prohibition of peddling milk in the primary circuit, whether hawking dealing with collection centers and / or peddling dealing with peri-urban dairies (trade of raw milk and derivatives).
Eliminate (or restrict) the presence of antibiotic residues in raw milk can only be done by allowing the direct sale of these drugs to farmers only on presentation of a prescription from a veterinarian. Admittedly, this measure will not solve this problem only partially, however it represents a necessary step. The order of Veterinary Medicine, College of Pharmacists, the industry (producers, collectors, processors) and regulators must work together to solve the problem vexed question of free movement of antibiotics and contribute to the preservation of consumer health (allergic to antibiotics, antibiotic resistance ,...)
Peddling raw milk and its direct sales to consumers or through dairies also represents a potential danger to the health of consumers. Pathogens that may exist in the milk produce several diseases (brucellosis, tuberculosis, salmonellosis ,...). However, these pathogens are resistant to heat treatments (boiling, pasteurization) milk and remain potentially dangerous. While raw milk has many dietary advantages (Présence d'anti-oxydants, vitamines ,...) mais sa vente doit être repensée dans une logique n'incluant pas les colporteurs tels qu'ils procèdent actuellement (en dehors de tout cadre législatif et juridique)
